Grilled New Potato Salad with Bacon and Onions

This is another delicious summer salad perfect for grilling. Served these potatoes with my favorite turkey burgers!

Grilled New Potato Salad with Bacon and Onions

Recipe slightly adapted Weber’s Greatest Hits by Jamie Purviance

  • 1/3 cup plus 2 tbsp. EVOO
  • kosher salt and freshly ground black pepper to taste
  • 2-1/2 lbs. new potatoes, 1-1/2-inch in diameter, cut in half
  • 8 oz. thick-cut bacon (I used regular bacon), cut into 1/4-inch dice
  • 2 medium sweet onions (or red onions), cut crosswise into 1/2-inch thick slices
  • 6 scallions (white part only – I used all the onion), thinly sliced
  • 1 tbsp. fresh thyme finely chopped (other herbs as desired such as parsley and basil)
  • 3 tbsp. sherry vinegar (or a vinegar of your choice)
  • 3 tbsp. low-sodium chicken broth or water

Prepare the grill for direct cooking over medium heat 350-450 degrees F.

Fry the bacon until crisp; remove and reserve the bacon fat.

Combine the 2 tbsp. oil, 1/2 tsp. salt and 1/2 tsp. pepper in a large bowl. Add the potatoes and toss to coat.

Grill the potatoes over medium heat with the lid closed until golden brown and tender, about 25-30 minutes, turning occasionally. Remove and let cool. Cut each potato half into two pieces and place in a large bowl; cover and set aside.

Brush the onion slices on both sides with some of the reserved bacon fat and salt and pepper. Grill with lid closed for 10-12 minutes (I grilled each side for 10 minutes), turning the slices and basting with more of the bacon fat. Cut each slice into quarters. Add to the potatoes along with the scallions, parsley and thyme.

In a small bowl combine the vinegar, broth, 1/2 tsp. salt and 1/4 tsp. pepper. Slowly whisk in the remaining 1/2 cup oil. Add to the potatoes and stir gently to combine. Let stand 1 hour for flavors to blend before serving.

It’s best served right away or at room temperature. I ate it chilled too and it was good.

Note: I cut the recipe in half to serve 4.

    • Grilling gives the potatoes a nice crispy texture and of course some additional flavor. I am trying to decide whether to keep the “like” button or not as some people just look at a post without reading it and click “like”. Likes do show up on my list of posts… but not on the published post that everyone sees. I enjoy getting feedback from comments 🙂

      • I understand. Though I also understand that sometimes one just likes a post/recipe without having to say much about it, yet wants to acknowledge the writer’s effort, so I enjoy both. 🙂

      • Sure, but on your reader all you have to do is press the “star or like icon” and you don’t even read the recipe and only see one picture – all you see is the title. I’ve noticed a lot of blogs don’t use it 🙂

      • I know, I’ve thought the same thing. But sometimes it’s nice to acknowledge a post and the writers effort. I don’t press like unless I have actually read it. But I have also stopped subscribing to blogs that I don’t intend to read.

      • Almost eight years of blogging and I have acknowledged many posts and made many comments. A lot of the “ole timers” are not actively blogging/socializing like Julie, Nancy and Loretta and others you may not know. Almost monthly I helped Angie out and actively acknowledged over 100 bloggers (at one time) with comments just at her weekly party. Maybe I am slowing down with the social end of blogging… 🙂 I do see the likes on my WordPress site but not on the posts!
