Quick Asian Beef Ramen Noodles

There are times when I am craving an Asian meal and want a dish to put together quickly and with only a few ingredients. Of course when the weather is warm I really don’t want to spend a lot of time in the kitchen either.

This recipe fit the bill – not much preparation, one-pan meal (ramen noodles are cooked with the meat mixture) and includes ingredients I usually have on hand.

I do have the ramen noodles in my pantry because of a favorite salad I make: Broccoli Slaw with Nuts and Dried Cherries. I always have the Asian seasonings, some kind of ground meat in the freezer, canned items such as bean sprouts or water chestnuts.  Onions and garlic are staples in my kitchen (I added fresh ginger, grated) and frequently green onions (if not I will use chives or shallots which are both mild). Quick Asian Beef Ramen Noodles

  • 2 ramen noodle packets (discard seasoning packets) – I always break up the noodles with my hands while they are still in the packets
  • 1 tsp. EVOO
  • 2 tsp. toasted sesame oil
  • 2 garlic cloves, minced (or more – I like lots of garlic)
  • fresh ginger grated on a microplane, to taste (Asian recipes need fresh ginger in my opinion)
  • 1/2 (or more) sliced onion (red or white), then cut again into pieces
  • 8 oz. ground meat (beef, pork, chicken or turkey)
  • 1-1/4 cups water (more as needed)
  • bean sprouts (I used a canned variety) I also like to cut them up as they can be rather “stringy”
  • 1 tbsp. dark soy sauce
  • 1 tbsp Oyster sauce (I used Hoisin)
  • 2 tsp. Hoisin sauce
  • 1 tbsp. mirin (sake)
  • sliced green onions to taste (shallots or chives can be used)
  • sesame seeds to garnish, toasted preferably

Combine the sauces and mirin and set aside. Heat both oils in a skillet or wok over high heat. Add the onion and cook for a few minutes, then add the garlic and cook another minute. Add the ground meat until the pink is gone and the meat is cooked through.

Add the sauce mixture and cook for 3 minutes until it starts to caramelize. Push the beef mixture to one side; add the water and broken up noodles. Leave for 45 seconds then turn. Leave for 30 seconds then toss through the meat. Add the bean sprouts and combine.

Garnish with green onions and sesame seeds.

I made this again and added, sliced celery, snow peas and spicy Sichuan chil crisp. Delicious – did not add bean sprouts.
