Sweet potatoes are a starchy root veggie rich in vitamins, minerals, fiber and antioxidants. So, this makes for a plant-based recipe that is absolutely delicious and healthy too!

Even though I probably will always make recipes that are not healthy for me I have been enjoying the Mediterranean cuisine that seems to be appearing in many cookbooks. Melty Sweet Potato Rounds with Honeyed Tahini and Toasted Sesame Seeds
- 3 medium sweet potatoes, washed and cut into 3/4-inch rounds
- kosher salt (to taste)
- 1/2 cup tahini, stir well
- 1/4 cup honey (I used a lavender honey)
- 1/4 cup sesame seeds, toasted
Preheat the oven to 425 degrees. Line a 13x9x1-inch sheet pan with foil and brush with olive oil.
Toast the sesame seeds in a dry skillet until you can smell them and they have lightly browned.
Arrange the potato rounds in the pan in a single layer. Brush the tops of the rounds with olive oil and season with a big pinch of salt. Cover the pan tightly with another piece of foil.
Roast the potatoes for 30 minutes, then remove the top foil and discard. Return the potatoes to the oven and roast for another 20 minutes, or until the bottoms turn golden brown. Flip the rounds over and roast an additional 10 minutes or so. When finished the potatoes will be nicely charred on both sides. Allow to cool for 5 minutes.
Combine the tahini and honey and stir well. You want it to be runny enough to drizzle. Heat a little if the mixture is too thick (I should have heated it as I would have preferred a thinner sauce). Place in a small bowl with a spoon for drizzling.
Place the rounds on a serving platter and drizzle the honeyed tahini over the potatoes. Top with toasted sesame seeds and serve.

The sauce is very complex so the lavender honey kind of got lost! I liked the idea of using it as lavender does pair well with sweet potatoes 🙂
