I was first introduced to Art Smith, former personal chef to Oprah Winfrey, on Oprah’s show way back when. During this time I purchased two of his cookbooks, Back to the Table (2001) and Back to the Family (2007). Art was cooking for Oprah, Stedman and their many guests from around the world.
His third cookbook, Art Smith’s Healthy Cooking (2013) came about due to his health issues and he proceeded to lose a whopping 100 pounds! This salmon recipe comes from this cookbook.
At some time Art and President Barack Obama were neighbors in Chicago and the Obamas occasionally ate at one of Art’s restaurants, now called Blue Door Kitchen & Garden in Chicago. Art also had the opportunity to cook family meals for them. A favorite of the Obama’s was this salmon that Art and Alan Wong created. I knew it had to be good and better yet, healthier than a lot of my other salmon recipes.

Miso-Ginger Grilled Salmon with Yuzu Juice and Sake Butter
Grilled Gochujang Salmon with Lemon, Rice and Snow Peas

Baked Salmon in Parchment with Julienned Veggies
Asian Salmon with Soy and Maple Syrup
Glazed Salmon
- 1 tbsp. brown sugar
- 2 tsp. unsalted butter
- 1 tsp. honey
- 1 tbsp. EVOO
- 1 tbsp. Dijon mustard
- 1 tbsp. reduced-sodium soy sauce
- 1 tbsp. fresh ginger, grated
- 1 tsp. sesame seeds (I used 1/2 tsp.)
- 1 salmon fillet, skin on, pin bones removed
- salt and freshly ground black pepper
In a small saucepan over medium, heat the brown sugar, butter and honey, stirring until melted. Remove from the heat and whisk in the oil, mustard, soy sauce, ginger and sesame seeds. Cool for 5 minutes.
Preheat the oven to 350 degrees. Place the salmon, skim side down, in a foil-lined baking pan and season with salt and pepper; spoon the glaze over the salmon. Bake uncovered for 20 to 25 minutes or until the fish flakes easily with a fork. Place the salmon on a serving platter and serve hot or at room temperature.
Nice recipe where both the glaze and fresh taste of the salmon were obvious and healthy at the same time!

This looks really easy and delicious! Salmon is one of my favorite healthy foods … will have to try this version.
It has just the right balance with an Asian touch. Too often sauces/glazes can overwhelm the salmon. I used PAM in a ceramic dish versus the foil 🙂

i adore salmon and cook it often. i bake it, wrapped in foil so very little oil is used. and it tastes delicious.
