Baked Shrimp and Orzo with Feta and Tomatoes

There are more veggies in this dish such as red onion, red and yellow bell peppers, petite peas and an extra kick with saffron threads and oregano. I was going to change the title to include more information but decided viewers need to look at my recipe more closely and see for themselves. I mentioned … Continue reading

Jamaican Seasoned Tilapia and Greek-Style Lemon Potatoes

Tilapia is a very mild fish and easily adapts to all kinds of spices and flavors. It is readily available and a very affordable fish that doesn’t taste fishy. A light entree that’s healthy too especially needed during the holiday season. This seasoning would be delicious on any mild flavored fish. I don’t buy seasoning … Continue reading

Glazed Salmon

I was first introduced to Art Smith, former personal chef to Oprah Winfrey, on Oprah’s show way back when. During this time I purchased two of his cookbooks, Back to the Table (2001) and Back to the Family (2007). Art was cooking for Oprah, Stedman and their many guests from around the world. His third … Continue reading

Master Gardener Volunteer Program

Spring means a lot of different things to me and not just the end of winter. However, this year I think most people in Michigan are happy to see the  warmer weather and no more snow!  Oh sure I love to hear the birds sing, watch the bulbs start to bloom and the trees in bud but  a special interest of mine is the  … Continue reading

Cedar Plank Salmon Fillets on the Grill

Salmon is a favorite fish in my family and I like to cook it a number of ways.  On the grill I usually wrap it in foil with some lemon and different seasonings or recently I tried plank cooking.  Years ago I tried cedar planks to grill some salmon  for Gene  but I seem to recall that I was … Continue reading

Lemon Basil Tilapia on the Grill

Margarita Grouper with a Tomato Salsa

This is a very flavorful dish with the orange and lime marinade and then topped off with a fresh tomato and jalapeno salsa.    Margaritas are enjoyed in my family so I always have the ingredients on hand.   They do sell these convenient mini bottles of ready-to-go margaritas, about 1 cup per bottle,  just enough to marinate a few fillets.

Tuna Melt Two Ways

This is one of my favorite ways to eat tuna fish; a big scoop of tuna on 2 halves of  a homemade toasted sourdough English muffin, slice of tomato and American cheese; then broiled in the oven to melt the cheese.  I also have included a version from Weight Watcher’s. I just found a Weight Watcher’s recipe … Continue reading

Asiago Tilapia with Mango Salsa

This is a mild, fairly thin fish that needs some extra flavor, like breading or perhaps a salsa.  This is one of the few fish I will buy frozen, if I cannot find it fresh;  I am particular about my fish.  Normally, I bake all of my fish but recently I wanted something crispy.  Moderation, … Continue reading
