I like to grill this fish wrapped in foil as it seems to fall apart or stick to the grill rack because it is so thin and fragile. This is a quick and delicious dish to fix in the summer. Of course you can always cook it in your oven, but who wants to heat up the house?
Lemon Basil Tilapia on the Grill
- tilapia fillets
- 1-1/2 tbsp. fresh lemon juice
- 1-2 tbsp. fresh basil, minced (I grow a lemon basil and I used this)
- 1 tbsp. olive oil (I also used my lemon oil)
- 1 garlic clove, minced
- 1 tsp. capers, drained, then smashed with a knife and minced
- 1/4 tsp. lemon zest
- salt and pepper to taste
Tear off a big piece of heavy duty foil and place the fillets on the foil. Combine the rest of the ingredients and add to the tilapia. Fold foil around mixture and seal tightly.
Cook for about 8 minutes on medium on a preheated grill. Serve with lemon wedges. Very tender and great flavor!
