A simple but tasty pasta salad. I usually have all of these ingredients on hand and it can be put together for a quick side dish. The salad will have more flavor if it is allowed to chill for a few hours.
Spaghetti Salad
- 1 lb. spaghetti broken into 4 pieces (I use Barilla Multigrain Pasta)
- 16 oz. Good Seasons Italian Dressing (make an additional 16 oz. in case the salad is too dry)
- 1 cucumber, peeled, seeded and chopped
- a couple of tomatoes, peeled, seeded and chopped
- bunch of green onions, chopped
- 2-4 tbsp. Parmesan cheese, grated (or to taste)
- 2 tsp. Perfect Pinch McCormick Salad Supreme seasoning
- McCormick Salad Toppins (optional)
Cook spaghetti according to package directions. Toss with Parmesan cheese, Salad Supreme seasoning and enough dressing to make it moist. Chill for a few hours. Prior to serving add cucumber, tomato, green onions and more dressing; toss. Add Salad Toppins if desired for a little crunch. This time I used my fresh snow peas from my garden; you can add any veggies you like or perhaps even some small pepperoni.

I’m going to make this salad for a monthly Girls Night Out tomorrow. If Megan is lucky there will be some left over for her…..but there probably won’t be! 🙂
