I like just about any type of salsa and this one is loaded with fresh tomatoes (even a few canned). Salsa can be made mild (use poblanos instead of jalapenos), use parsley instead of cilantro, add more onions and so on. A fun dish to make.
Pico de Gallo
- 6 medium tomatoes, peeled, seeded and diced
- 1 fresh jalapeno pepper, diced
- 2 tbsp. fresh cilantro, chopped
- 1 small onion, diced
- 2 tbsp. garlic, minced
- 1/2 tsp. ground cumin
- 2 tbsp. sugar
- 1 (15 oz.) can whole, peeled, seeded, drained and chopped tomatoes
- 1/4 cup lime juice
Combine all ingredients and serve with tortilla chips or a good cheese bread, sliced and toasted.
