Black bean burgers are a staple in my freezer and I always have some on hand. I have one recipe from the  America’s Test Kitchen and now this very flavorful version from Eating Well Magazine. I like the idea of using tortilla chips for the breading and the salsa addition too.

Pinto beans and salsa are two staples I always have on hand.  This recipe makes a quick and easy appetizer for unexpected guests.  It is also very healthy.

Pico de Gallo

I like just about any type of salsa and this one is loaded with fresh tomatoes (even a few canned).  Salsa can be made mild (use poblanos instead of jalapenos), use parsley instead of cilantro, add more onions and so on.  A fun dish to make.
