Weight Watcher’s English Muffin BLT with Avocado
I would serve this for lunch and not breakfast as Weight Watcher’s suggests. It is very good and I like the addition of avocado. Per sandwich it is worth 6 points.

These subs would be great to serve during football season or any time you would like a different kind of sandwich. I always like to use my own meatball and sauce recipe (see Spaghetti with Meatballs in a Marinara Sauce for my recipes). You can use your own recipes or follow the recipe below. Using a slow cooker is a handy way to serve a crowd on a football Saturday and something you can make ahead of time and reheat. My recipe for Pulled Pork Sandwiches and Slow Cooker Pulled Chicken are other good recipes to make in a slow cooker.

This is a favorite sandwich in my home, we would split the sandwich and have a bowl of tomato soup on the side. Perfect comfort food…

This is a great salad to serve for a light lunch and it can be made ahead of time. You could even make a sandwich using a fresh croissant sliced in half. Either way is delicious. 1 cup dried tart, red cherries (cranberries can be used as a substitute) 4 chicken breast halves (bone in and … Continue reading
Another delicious panini sandwich using turkey, cheese, a pesto spread (basil, basil, basil!) and red onion slices. I really enjoy eating a warm, grilled sandwich filled with all kinds of goodies.
When I first bought my Krups Panini Maker I was looking for all kinds of ways to make grilled sandwiches. My best “bud” occasionally would fix a peanut butter and banana sandwich and I asked him if I could grill it. He was always willing to accomodate any experiment I might have when I was in … Continue reading
Fajitas always make a good sandwich any time during the year. Three main ingredients make up this tasty wrap; meat, onions and peppers. The big difference is the type of meat, what you marinate the meat and vegetables in, for how long and the toppings you serve with it. Also see my recipe Rajas Con Crema for a … Continue reading
