Bacon, Cheddar and Tomato Panini
- 4 slices country-style bread (I buy a fresh loaf from Whole Foods and they slice it for me)
- 2 tbsp. mayonnaise for spreading on the inside of the sandwich
- butter is optional for spreading on the outside of the panini (for my husband but not me)
- sharp cheddar cheese, shredded (you can use any cheese you like)
- 4 bacon slices, cooked
- tomato slices (the tomatoes were very juicy so I seeded them as I did not want the sandwiches to be soggy)
- lettuce (optional)
- fresh basil, chopped would be good (or mix a little basil with the mayonnaise)
Preheat a panini press, or a grill pan or even a skillet. You can always broil these sandwiches in your oven or use a toaster oven – use whatever you have. I just happen to like the outcome when I use my Panini maker. Spread mayonnaise on each slice of bread; sprinkle one slice with grated cheese, then top with 2 bacon slices, and a sliced tomato. Add a leaf of lettuce if desired.
