When I first bought my Krups Panini Maker I was looking for all kinds of ways to make grilled sandwiches. My best “bud” occasionally would fix a peanut butter and banana sandwich and I asked him if I could grill it. He was always willing to accomodate any experiment I might have when I was in the kitchen. He liked it! Apparently, this was Elvis’ favorite sandwich. See Kitchen Gadgets – Panini Maker.
I have also included a recipe from the Canyon Ranch which has some of the same ingredients but is totally different.
Panini with Peanut Butter and Bananas
- 2 slices firm white bread
- peanut butter of your choice (chunky is okay too)
- 1 small banana
- butter, softened (optional)
Spread 1 slice of the bread with the peanut butter. Slice the banana evenly over the peanut butter. Top with the second slice; butter the outside of the sandwich if desired.
Grill until browned on both sides. Of course you do not need a Panini Maker to make this sandwich, a skillet would be fine. I also have a Le Creuset Grill Pan as well that gives the same marks as the Panini Maker. Kids of all ages will love this sandwich!
Canyon Ranch Grilled Peanut Butter and Banana Sandwich
- 3 tbsp. low-fat cream cheese
- 3 tbsp. natural peanut butter
- 1/2 banana, mashed
- 2 tbsp. honey
- 1/8 tsp. sea salt
- 8 slices multigrain bread
- 4 medium bananas
Combine the first five ingredients in a small bowl and blend well with an electric mixer. Spread 2 tbsp. of this mixture on each of 4 slices of bread.
Spray a large non-stick skillet with canola spray and heat to medium. Slice the 4 whole bananas in half crosswise and then in half again lengthwise. Saute until caramelized about 4 minutes.
Divide the cooked bananas evenly and place on top of the peanut butter bread slices. Place the remaining 4 slices of bread on top. You can either cook these in a skillet or use your panini maker.
