First of all after trying to cut 6 Persian cucumbers accordion style I have to admit I need a lot more practice. In addition to this recipe I watched a video on Youtube, Nick’s QR code in lower corner of recipe and looked at other recipes. I tried slicing at an angle, straight and it didn’t matter, I did not achieve an accordion look so I cut them in slices. Gene always told me I couldn’t cut straight unless I had a guide. I would like to blame it on my aging eyes now…

The dressing was delicious with a touch of tarragon but I did have to add 1/2 cup whole milk to thin…

A nice side with some Canadian bacon and sweet potato…

Green Goddess Cucumbers Accordion Style
Salad:
- 5-6 Persian cucumbers
- kosher salt and freshly ground black pepper to taste
- lemon zest to taste
- EVOO to finish (optional)
- fresh chives, chopped to taste
- toasted sesame seeds to taste
Slice the cucumbers as you prefer. The accordion style really looks nice but I will have to keep practicing. I ended up slicing them all the way through. In a large bowl toss the cucumbers with salt and pepper to taste. Allow to sit to draw out their flavors; I did this for 30 minutes.
Dressing:
- 1 tbsp. freshly squeezed lemon juice
- 3/4 cup mayonnaise (I used Hellman’s Light)
- 1/4 cup sour cream (I used light)
- 1/2 cup whole milk I added to thin the dressing
- 1/4 cup fresh parsley, chopped
- 1 tbsp. tarragon leaves, chopped (might add a little more)
- 1 small garlic clove, chopped
In a blender combine the lemon juice, mayonnaise, sour cream, milk if needed, parsley, tarragon and garlic. Blend until smooth. Nick’s version didn’t use anchovies which many versions do…
Drain the cucumbers in a fine mesh strainer and rinse. Dry throughly on a towel. Transfer to a serving dish and drizzle the dressing over the cucumbers. Grate some lemon zest over the top, drizzle on a bit of EVOO if desired and sprinkle with chives and toasted sesame seeds.
This recipe is best eaten the day you put it together.
Try it with shrimp cocktail, vegetables or even fish!

While the accordion cucumbers look nice, it’s the taste that counts. The dressing sounds perfect. Tarragon is one of my favorite herbs. 🙂

Accordion sliced cucumbers is not an easy task. I think a nice slice is perfectly good. Your cucumber salad looks really delicious. Your dressing can be used for so many dishes. Thanks for sharing.

Thanks Velva – I really liked the accordion look but I would have to make this dish frequently to become any good at it! The dressing is delicious, with a “light” green goddess taste – not so overpowering as some dressings 🙂
