Shamrock Cookies (for the rim of your coffee mug or tea cup) and Irish Coffee

HAPPY ST. PATRICK’S DAY! According to my Ancestry report I am about 11 percent Irish so why not celebrate with some shamrock cookies.

I have been making my Mom’s Sugar Cookies ever since I can remember. I still have some of the old cookie cutters we used as children.

The cookies are a little fragile but we always liked it when one broke – then we could eat it. The recipe was one of the first on my blog back in 2011. All the kids I knew grew up with these cookies and are always expected especially for holidays. My siblings carried on this tradition as well with their families.

It’s important to let the icing dry thoroughly before hanging on your mug… I was in a hurry to take the pictures! Royal icing might be a better choice for these cookies.

Some years ago I became aware of cookie cutters that fit on the rim of your coffee mug or tea cup. I have collected a number of them…

When using these cookie cutters you can control the size of the opening. I originally was going to use my glass mugs and then when I went to assemble them I got out my Waterford. The thickness of the mug makes a difference… you want the cookies to stay on the rim and not fall off.

My Waterford glasses were too thin…

Irish Coffee appeared a few years ago on my blog and is such a treat – perfect to go with these “Irish Shamrock” cookies. Here is another iced coffee version.

Kahlua and Bailey's Iced Coffee

Per each mug:

  • freshly brewed coffee
  • equal amounts of heavy cream, Bailey’s and Kahlua
  • ice (optional) I did not use
  • whipped cream, chocolate curls and caramel sauce to garnish

Brew your coffee and allow to cool. Add the heavy cream and 2 liquors in a hand shaker. If you use ice be sure to only swirl the mixture. Garnishes are optional…

  1. Well kiss the blarney stone, now I’ve seen everything. Well, likely not everything. I love the cookie cutters and the cookies. And, that you can hang them on the Irish coffee cup/glass is brilliant. The Kahlua and Bailey’s iced coffee is a new one for me and one I’ll try once the snow melts. Happy St Paddy’s Day Judi…

    • Thanks Ronit – they are especially good with a “special” beverage. WP has switched me to the “block format” – I am trying to figure it out as it is different. Has it happened to you?

      • It has, and it’s very frustrating!
        So far I kept on switching to classic editor, but it seems to be gone. I still need to figure out how to deal with this new one, which I really don’t like.
        We’ll see how it goes, if at all…
