Reuben Balls with Thousand Island Dipping Sauce

When it’s March I always think of “corned beef” for St. Patrick’s Day and the fact is I do have some Irish heritage (thanks Ancestry). Corned beef and cabbage is often on the menu partly because I enjoy the leftovers in reuben sandwiches. This year I wanted to make something new and different in the … Continue reading

Colcannon Potatoes for St. Paddy’s Day

Colcannon comes from the Gaelic term “cal ceannann” which means white-headed cabbage. The Irish tradition is to serve this as the main dish for Halloween festivities and is known as “Colcannon Night”. The introduction of this classic potato and cabbage dish in America has been served more commonly on St. Patrick’s Day. I looked at … Continue reading

Irish Lamb Stew

This is an old recipe of mine and since this is “lam1”, or my first lamb recipe,  from my previous computer file, it is very old.  I use to fix this to celebrate St. Patrick’s Day but Corned Beef became the favorite.  Yes, I have a little Irish heritage (Maclean clan) but also Scottish, English … Continue reading

Chocolate Stout and Irish Cream Liqueur Cupcakes

This is one of the recipes in my St. Patrick’s Day file and looked like a good one to make for the upcoming  holiday.  I have already posted so many recipes such as Corned Beef and Cabbage, Slow Cooker Reuben Dip, Corned Beef Hash, Reuben Crescent Rolls, Irish Coffee, Reuben Panini, Reuben Breakfast Casserole, Palmiers Appetizers , … Continue reading

Irish Coffee Two Ways

When you want a special coffee drink this is a good choice and it serves one.  How about serving it after you eat Corned Beef and Cabbage tomorrow for St. Pat’s Day? While going through my files I ran across this iced version of Irish Coffee from Cuisine at Home and wanted to include it.

Corned Beef Hash Three Ways

I like to serve this for breakfast or as a light dinner with a salad.  Homemade is so much tastier than what you get in a can.  Before my husband met me that was how he fixed his corned beef – straight from a can!   This recipe comes from Weight Watcher’s and if my husband liked it, it … Continue reading

St. Patrick’s Day Pistachio Cookies

These are very delicious cookies with the nuts and pistachio pudding and a perfect dessert to share with your family and friends. They are a light shade of green and you could decorate them if you want to with squiggles of green icing. March 13, 2017 – new pics!

St. Patrick’s Day Breakfast Casserole

Yes, I do like my “get ready the day before casseroles” and this breakfast treat is a way to use up that leftover corned beef.  The crunchy topping is a nice change from having the bread on the bottom. I added more toasted rye bread when I made it again – gave the casserole a … Continue reading

Weight Watcher’s Corned Beef and Cabbage

This is a traditional dish I make every year for St. Patrick’s Day.   Having experimented with a number of recipes I finally settled with this recipe which everyone likes.  It is a Weight Watcher’s entree and another plus is that it is cooked in a slow cooker.
