Southern Green Beans Slow Cooked

Green beans frequently appear as a side, salad, in a casserole or part of a sheet pan dinner. I have many recipes using them with different ingredients or cooking methods.

Southern Green Beans Slow Cooked

  • 2 lbs. fresh green beans, trimmed and cut in half
  • 6-8 slices of bacon, fried and torn into pieces (Applewood smoked bacon is preferred)
  • sweet onion, diced (to taste)
  • 4-6 large garlic cloves, minced
  • pinch or two of red pepper flakes
  • large russet potato, peeled and diced
  • 1/2 to 1 tbsp. Worcestershire sauce
  • 2 cups low-sodium chicken broth
  • kosher salt and freshly ground black pepper to taste

Add the fresh green beans to the slow cooker, crock pot or smart pot. Three of my cookers are given these names. I always call them slow cookers…

Fry the bacon until crisp; remove, tear into pieces and set aside to be used as a garnish when serving.

Saute the onion in the bacon grease for 5-10 minutes, add the garlic and red pepper flakes and cook for another minute or two. Add this mixture along with the diced potato to your slow cooker.

Stir in the Worcestershire sauce and chicken broth and cook on high 3-4 hours or 6 hours on low. Basically, cook them until they are as tender as you like them. Adjust seasonings if you need to. Garnish with some bacon pieces.

When I had a vegetable garden the green beans always had plenty of space to grow and were prolific as long as I picked them on a regular basis, especially the haricots verts – my favorite!

A few plugs for Gene – he was a “jack of all trades” – he built this three section compost bin…

He also constructed this “garage” for the generator which pumped water from our small pond and also watered the garden… he was an engineer after all…

  1. There is almost nothing more aromatic than a sweet onion sauteing in bacon fat – this would be a great company dish because your guests would swoon just from the scent! And the green beans make it a healthy and hearty side dish as well.

    • Thanks – Gene had extra roofing materials (from building a pole barn and shed) so he made use of the leftover materials. Green Beans are a favorite veggie as evident by the number of recipes on my blog – if interested just search “green beans”
