Sausage-Hash Brown Breakfast Casserole

Breakfast casseroles are favorites in my family. I especially enjoy them because they can be assembled and even baked the day before giving you time in the morning for other things.  Serve with muffins such as Banana Blueberry or Raspberry or Cranberry Crunch.  Juice, or better yet – Mimosas and or fresh fruit are nice additions.

This casserole is loaded with two kinds of sausage, onions, potatoes and lots of cheese. A hearty breakfast treat for sure!

My family’s  favorite breakfast casserole is Company Brunch which has ham and sausage. Other good choices are Salami & Monterey Jack Cheese and St. Patrick’s Day Breakfast Casserole (for some reason I can’t link it but the recipe is there). We also usually have kielbasa with many choices of mustards.

This recipe is adapted from Southern Living and I have indicated my changes

Sausage-Hash Brown Breakfast Casserole, Adapted

  • 1 lb. mild ground pork sausage (I used Bob Evans which comes in a roll)
  • 1 lb. zesty hot ground pork sausage (I used Bob Evans and also comes in a roll)
  • 1/2 – 1 cup onions, chopped (optional – I added)
  • red/green pepper, chopped to taste (optional – I added)
  • 1 (30 oz.) pkg. frozen hash browns – O’Brien potatoes would be delicious or add onions and peppers above (I used shredded but you can use cubed or simply potatoes found in the dairy section)
  • salt and pepper to taste (the sausage has lots of seasoning so you won’t need much s&p)
  • 1 cup cheddar cheese (I used 1-1/2 cups 1 year aged white cheddar) shredded
  • 6 large eggs
  • 2 cups milk (even skim will work)

Preheat the oven to 350 degrees. Break up the sausage and cook with the onions until the sausage is no longer pink; drain and set aside.

Prepare the hash browns according to package directions adding salt and pepper(optional). I always cook them longer than what the package says.

Combine the potatoes, sausage and onions (if used) and cheese. Pour into a greased 13- x 9-inch baking  dish.

Whisk together the eggs, milk and salt if desired. Pour evenly over the potato/meat mixture.

Bake for 35 to 45 minutes. Cool on a rack for 10 minutes, then cut and serve.

  1. Judi, your breakfast casserole sounds so good I’d eat it for dinner any day. And, served up with some warm muffins and a couple of fried eggs on top, I’m in heaven. This will be our New Years Day breakfast. Thanks for sharing and Happy Near Years.
