Simple, delicious and a healthy recipe! In my magazine Cuisine Tonight “Thinner Dinners for Two” this recipe was included for a perfect winter salad which has oranges, avocados, spinach and a citrus dressing – no oil! Actually, this salad would be good all year but the oranges are especially tasty right now. These are favorite ingredients and to combine them in a healthy salad, I knew I had a keeper.
Best of all it is very good and will be a regular salad for me as the only fat is the avocados and they are the good fats. Avocados are in the news a lot lately because they are incredibly nutritious and have many health benefits. Such as they contain lots of potassium, are loaded with heart-healthy monounsaturated fatty acids, have lots of fiber and can even lower cholesterol and triglyceride levels.
Did you know that the avocado has become extremely popular as a breakfast item, more specifically on toast? If you want to join the social media and make a slice sometime, combine a little lemon juice and salt to a ripe avocado, spread it on your favorite toast and drizzle with olive oil per the Food Network Magazine.
Besides I think I have made something everyone will like and be able to eat! Of course it can be “tweaked” with a sprinkling of nuts or a little cheese.
Spinach, Avocado and Orange Salad for Two
- 4 cups fresh spinach
- 1 avocado, peeled and thinly sliced
- orange segments; I use mandarin oranges, but I always use the zest and fresh juice from oranges
- thinly sliced red onions
- 1/4 cup fresh orange juice
- 2 tbsp. fresh lime juice
- kosher salt and pepper to taste
- 1 tbsp. each orange and lime zest to garnish
Divide spinach between two plates. Arrange half of the avocado slices, orange segments and onion evenly on top of each.
Combine orange and lime juices and salt and pepper to taste; drizzle over the salads. Garnish with the zests. How simple is this!

Just bought some individual servings of avocados – perfect when you only want a small amount. This confirms avocados are a super food as they are now small enough for 1 person. I sure do like them 🙂

I have seen so many avocado on toast, Aunt Juju, but I haven’t tried it still. I love this Judi… such a simple salad, yet bursting with complex flavors. That’s my kind of salad! As far as avocado toast, I’ve yet to try it, which surprises me, because I love avocados. What a lovely salad! I’d make this today if I could get my hands on decent avocadoes this time of year! Usually I buy about 5, and 1 might be useable. A terrible waste of money!
