This recipe is a different way to fix a baked potato resulting in a really nice crispy topping. I saw this idea in a Paula Deen cookbook and have changed the directions and ingredients a little.
Parmesan Baked Potato for Two
- 1 large baking potato
- 1 tbsp. butter, melted
- 1/4 cup Parmesan, grated
- 1/4 tsp. paprika
- 1/4 tsp. garlic powder
- other seasonings (optional)
Cut the potato in half lengthwise. Lightly score the cut sides with a knife and brush with butter. Mix Parmesan, paprika and garlic powder together (other seasonings are optional). Press the cut sides with the Parmesan and seasonings. Place the potato, cut sides down on a buttered pan, and bake at 400 degrees for about 1 hour or until tender.

What a great idea, I love it. I’m going to try this tonight, I bet it was really good.
