A grilled steak, baked potato and bread, and always a Caesar Salad with this meal. Here are two great choices; a traditional recipe with anchovies and the other is mayonnaise based without the anchovies. I have included my recipe for homemade croutons just for this salad as well.
Caesar Salad with Anchovies
- 1 garlic clove, minced
- 3 anchovy fillets (or 1-1/2 tsp. anchovy paste)
- 1/4 cup olive oil
- 1 tsp. Dijon mustard
- 1 tbsp. red wine vinegar
- 1/2 tbsp. Worcestershire sauce
Combine above ingredients and serve over romaine lettuce with Parmesan croutons and extra Parmesan sprinkled on top if desired. I prefer to use fresh garlic, versus the minced garlic in a jar, and the anchovies in a jar, versus the anchovy paste. I think the flavor is much better. However, I do have the other two items in my refrigerator just in case…

Caesar Salad with Mayonnaise
- 1/2 cup mayonnaise
- 1 garlic clove, minced
- 1-1/2 tbsp. fresh lemon juice
- 1 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1/2 tsp. Worcestershire sauce
- 1/4 tsp. freshly ground black pepper
- 3 tsp. or more Parmesan cheese, grated
Combine all of the ingredients and mix well. This dressing should be creamy and easy to pour. The last time I made it I used 2 tbsp. olive oil (instead of 1) and 6 tbsp. Parmesan (instead of 3 tbsp.). Make this dressing to taste…

Homemade Parmesan Croutons
- 1 day old large loaf of white bread, decrusted
- 1 cup olive oil
- 4 garlic cloves, peeled and cut in half
- 1/2 to 1 cup Parmesan cheese, finely grated
Soak garlic halves in olive oil overnight. Remove garlic and brush decrusted bread lightly on both sides. Cut the bread into cubes and bake on a foil lined baking sheet in a 350 degree oven for 15-20 minutes or until toasted, turning once.
Fold the foil up around the croutons and carefully pour into a paper bag (I use lunch bags). Sprinkle with Parmesan cheese, close the bag and shake until cheese has melted.
