I frequently make a Caesar salad and I always enjoy it in a wrap with the addition of chicken. You can use my recipe for Caesar Salad With Homemade Parmesan Croutons (mayonnaise based) and add cooked, cubed chicken to the tortilla wrap, or make the following lower fat version.
Chicken Caesar Wraps
- 3/4 cup fat-free creamy Caesar salad dressing (I use Ken’s Light)
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper (I do not add as I pepper the chicken when it cooks)
- 2-3 cups chicken breast, cooked and cubed
- 1-2 cups romaine, torn up into pieces (grilled would add a nice touch)
- 3/4 cup salad croutons (I leave them whole but you can chop them up)
- 6 (8-inch) tortillas (I like La Banderita soft taco tortillas, fat-free that are 8-inches)
In a bowl, combine the dressing, cheese, garlic powder and pepper. Add the chicken, romaine and croutons. Spoon about 2/3 cup chicken mixture down the center of each tortilla and roll up.

I prefer the soft tortillas on the left even though they make a bigger wrap.
