Appetizer Roll-Ups Nine Ways

I have a few recipes to share of a very simple appetizer and something you can get ready the night before.  Two are using ham slices, one uses beef or corned beef and six use tortillas.  Five of the roll-ups have no meat.  These recipes are just some guidelines as you can be very creative with the ingredients you use.

Ham Roll Ups No. 1

  • 1-1/2 lbs. deli ham, sliced thin
  • 8 oz. cream cheese, softened
  • 1 tbsp. Worcestershire sauce
  •  4 green onion tops and bottoms, minced

Combine cream cheese, Worcestershire sauce and green onions.  Spread on ham and roll up tightly.  Cut into 1-inch slices before serving.

Ham Roll Ups No. 2

  • 8 slices deli ham
  • 8 thin slices swiss cheese
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 envelope Mrs. Grass Onion Soup Mix

Cover ham slices with swiss cheese.  Combine cream cheese and onion soup mix and spread on top of swiss cheese.  Roll up and refrigerate overnight.  Cut into 1-inch slices before serving.

For the rolls below I used a thin slice of ham and turkey, plus the cheese then the cream cheese mixture.  You can do what you want with any of these rolls; substitute meat, add an item.  Just experiment!

Beef Or Corned Beef Roll Ups

  • 8 oz. Buddig sliced beef or corned beef
  • 8 oz. cream cheese, softened
  • 1 tbsp. onion, minced
  • 1 tsp. prepared horseradish
  • dash of Worcestershire sauce

Lay out meat in stacks of 4 slices each as they are very thin.  Place 2 double slices in a row, slightly overlapped.  Combine the rest of the ingredients and spread over the meat to the outside edges.  Roll up and refrigerate overnight.  Cut into 1-inch slices before serving.

Just made these delicious rolls again  with Buddig beef slices.  I found you can use 2-4 slices in the stacks.  I prefer to use 2-3 slices in the stacks and then overlap with the same amount.   They are easier to roll and stay together better. Just be sure they are lined up as good as you can get them.  The picture is a little deceiving as to the actual size of the rolls.  If you go with the 2 slices per stack you will probably need more filling.

Tortilla Ranch Ham Roll Ups

  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 envelope Ranch salad dressing mix
  • 3 green onions, chopped
  • 11 (8-inch) flour tortillas
  • 22 thin slices of deli ham

Combine the cream cheese, ranch salad dressing and green onions.  Spread approximately 3 tbsp. over each tortila; top each with two ham slices.  Roll up tightly and wrap in plastic wrap; refrigerate overnight.  Cut these in 3/4-inch slices when ready to serve.

Tortilla Taco Roll Ups

  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 cup (8 oz.) sour cream
  • 2 cups sharp cheddar cheese (or use Monterey Jack or a 4 cheese Mexican mixture)
  • 1/2 cup picante sauce or a salsa of your choice
  • 2 tbsp. taco seasoning
  • 1 tbsp. onion soup mix
  • 8 (10-inch) flour tortillas

Combine the first 6 ingredients and spread about an 1/8 of a cup over each tortilla.  Roll up, wrap in plastic wrap and refrigerate for at least 1 hour.  When you are ready to serve, cut each tortilla in 1-inch pieces.

Tortilla Roll Ups With Vegetables

  • 16 oz. sour cream
  • 4 oz. cream cheese
  • 8 pack flour tortillas
  • 1 pkg. Hidden Valley Ranch dip mix

Combine the sour cream, cream cheese and dip mix; spread over the tortillas.

Top with:  broccoli, cauliflower and onions chopped; grated Cheddar cheese and crumbled cooked bacon.  Roll up and chill overnight.  Slice 1/2-inch thick.

Tortilla Roll Ups With Green Chilies

  • 1 cup sour cream
  • 8 oz. cream cheese
  • 1 (4 oz.) can chopped green chilies, drained
  • jalapeno peppers, diced to taste (optional)
  • could add some picante sauce
  • 1 cup sharp cheddar cheese (or Monterey Jack) shredded
  • 1/2 cup green onions, chopped
  • garlic powder and taco seasoning to taste
  • flour tortillas

Combine all of the ingredients and spread over the tortillas; roll up tightly.  Wrap in plastic wrap and refrigerate.

When ready to serve cut into 1/2-inch slices.  Serve with a picante sauce or salsa.

Tortilla Roll Ups with Chipotle Seasoning

This recipe comes from Mrs. Dash – I love all of their salt-free seasonings!

  • 8 oz. cream cheese, softened
  • 2 tbsp. Mrs. Dash Southwest Chipotle Seasoning Blend (or to taste)
  • 3 tbsp. green onions, chopped
  • 2 tbsp. red pepper, minced
  • 4 large flour tortillas

Combine all of the ingredients except the tortillas.  Divide the mixture onto the four tortillas and spread a thin layer on each.  Roll up into a tight tube and wrap and chill over night.  When you are ready to serve cut each tortilla into 1-inch slices.

Tortilla Roll Ups With Salsa

  • 4 oz. low-fat cream cheese, softened
  • 3-4 tbsp. salsa
  • 1/2 cup cheese of your choice
  • 4 (6-inch) flour tortillas

Combine the cream cheese and salsa, spread over the tortillas.  Sprinkle the cheese on top. Roll each tortilla up tightly, cover and refrigerate overnight.  Cut each tortilla into 1-inch pieces and serve.
