Weight Watcher’s Applesauce-Sour Cream Coffee Cake

You know there are so many good Weight Watcher’s recipes and this is one of them.  A very moist, tender cake which is delicious topped with some low-fat whipping cream or perhaps some frozen yogurt.  See whipping cream recipe below  which would be 3 PointsPlus per 3 tbsp.  A mere 3 points per serving for the cake and yes the pieces are small but you could have two!  Besides it being a Weight Watcher’s recipe I got to use my homemade applesauce in another recipe.

WW Applesauce-Sour Cream Coffee Cake

  • nonstick spray to coat pan
  • 1-1/2 cups flour
  • 3/4 light brown sugar, packed
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3/4 cup fat-free sour cream
  • 2 tbsp. vegetable oil
  • 1 cup unsweetened applesauce

Comment:  The cinnamon I use comes from King Arthur Flour called Vietnamese Cinnamon.  It has a more pronounced and complex flavor than what you buy at the grocery.  The applesauce is my own recipe which I can every year.  See my post Grandma’s Applesauce.  Here again my applesauce is very different in flavor and color than what can be found at a store – much better according to a number of family members and me of course.

Preheat the oven to 350°F.  Spray a 9-inch square pan with the nonstick spray.

Combine all of the dry ingredients in a large bowl and all of the wet ingredients in a small bowl.  Stir the wet ingredients into the flour mixture just to combine.

Spoon batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 40 to 45 minutes.  Allow cake to cool to warm or room temperature before slicing into 16 pieces.

WW Whipped Cream with Cream Cheese

  • 1/4 cup (2 oz.) cream cheese, softened
  • 1 tbsp. sugar
  • 1 tsp. vanilla
  • 1 cup heavy cream (I use pasteurized)

Combine the cream cheese and sugar until the sugar is dissolved; stir in the vanilla.  In another bowl whip the cream until it forms medium peaks; add the cream cheese mixture a spoonful at a time with the mixer running until it is mixed well.  I used my hand mixer so I had to stop it as I added the cream cheese mixture and it turned out fine.
