This is the best recipe for these sandwiches. Because a pork tenderloin is low in fat you need to cook it in a slow cooker for the meat to become tender. This is a Weight Watcher’s recipe which is an added bonus.
Pulled Pork Sandwiches
- 1-1/2 lbs. pork tenderloin, cut into 3/4-inch cubes
- 1 cup barbecue sauce (see below)
- 1 onion, finely chopped
Barbecue sauce:
- 1 cup ketchup
- 1/2 cup honey
- 1 tbsp. soy sauce
- juice of 1 lemon
- 1/4 tsp. Tabasco (or to taste)
- I also like to add Sirracha sauce to taste and then serve it on the side for those who like extra heat
I always double this recipe when I make this dish. In addition I have extra ingredients on hand to make additional sauce if I need to. I brown the pork tenderloin for 5 to 10 minutes first, cool and cut into cubes, but you do not need to; I like the extra flavor.
Place pork, barbecue sauce and onions in a 6-quart slow cooker and mix well. Cook on high for 1 hour, then on low for 4-6 hours or until you can shred the meat easily.
Shred pork and serve; add more barbecue sauce if needed. Serve either open faced or on a hamburger bun. A nephew likes his sandwich with a slice of American cheese.
