Nothing better than caramelized onions; the slow cooking brings out their natural sweetness. Green beans are a perfect vegetable to go with these fabulous onions. If you cannot get beans fresh, the grocery stores carry a fairly good packaged product.
Green Beans with Caramelized Onions
- 2-3 medium onions (red or white) cut into 1/2-inch thick wedges
- 1-2 lbs. fresh green beans, trimmed (do not use canned beans)
- 4 slices bacon, cooked and crumbled (save grease to caramelize the onions) optional
- 3 tbsp. cider vinegar
- 1 tbsp. balsamic vinegar
- 2 tsp. light brown sugar
- salt and pepper to taste
Caramelize the onions for about 45 minutes in a large skillet in 1 tbsp. oil or use the bacon grease. Bring a large saucepan of lightly salted water to boil; add beans and cook for about 45 minutes; drain. Add the beans to caramelized onions.
Add the vinegars, sugar and salt and pepper to taste. Add bacon pieces (optional).
Easy on the salt and pepper and try the beans with 1 tsp. sugar first, then add more if needed.
