Dried Fruits and Vegetables

I have not used my dehydrator in awhile so I thought I would see how zucchini, apples and bananas turned out.  In the past I mainly used my dehydrator to dry many varieties of peppers or citrus fruits.  You just plug it in, turn the temperature to 135 and dry depending on the product, the size, whether you … Continue reading

Weight Watcher’s Pesto Two Ways

I was a little hesitant to make a Weight Watcher’s pesto when the “real” thing is so good.  See also my recipe Pesto where I have included some information on why basil turns brown and how to prevent it.  I had a lot of basil that needed to be used before it started to flower, so why … Continue reading

Blueberry Streusel Muffins

These Weight Watcher’s muffins are packed with blueberries and a delicious crumb topping.  Pretty good for only 4 points per muffin!  See also my recipe Banana Blueberry Muffins. These are much better than the store-bought Weight Watcher’s blueberry muffins!

Weight Watcher’s Asian Sesame Noodles

This  dish has a light and nutty sauce.  I prefer  to serve it at room temperature but you can serve it cold.   Very good  with a little bread or perhaps a salad… See also Peanut Butter Noodle Salad. See also Peanut Soba Noodles.

Weight Watcher’s Cheese Sauce Two Ways

Use this sauce on any vegetables you like – only 2 points per 3 tablespoons.  The second recipe uses Gruyere cheese (or any Swiss cheese) and I do not have the points value but I am sure it is about the same as the first recipe. See also Spicy Cheese Sauce for Vegetables, Cheese Sauce … Continue reading

Spicy Louisiana Potatoes and Onions

Cajun seasoning adds some nice heat to these Weight Watcher’s potatoes.  If you like things on the mild side use less or even a different seasoning.   Only 2 points per serving and this recipe serves 6. 1-1/2 lbs. new potatoes, cut into wedges 1 red or white onion, cut into wedges 1 tbsp. olive oil … Continue reading

Coeur A La Creme Four Ways

This was another favorite dessert Gene enjoyed and you can see why by the high fat ingredients!  Do not substitute low fat for the whole fat items.  I have included my recipe, a chocolate one that sounds delicious but I have not tried yet as well as one from the Inn at Little Washington in … Continue reading

Romaine Wedges with a Tangy Blue Cheese Vinaigrette Two Ways

What a great salad and so simple to make.  Be sure to use a good quality blue cheese such as Maytag for the best results which was a favorite of Gene’s.  I have included a Weight Watcher’s recipe as well – not bad but there is a difference between the two.

Chicken with Balsamic Vinegar and Sweet Onions

A Weight Watcher’s recipe with three of my favorite ingredients; balsamic vinegar, onions and thyme.  Delicious together and another recipe that I have changed just a little.  After eating some Krispy Kreme Monkey Bread for breakfast yesterday I needed to be careful of what I had for dinner!
