Weight Watcher’s Pan Fried Fish Sandwich

This version of a high fat fast food classic becomes healthy, tasty and easy to cook.  Flounder, grouper or tilapia fillets are relatively thin and take little time to pan fry.  Not on a diet or watching your weight?  See my recipe Grouper Sandwich with Chipotle Tartar Sauce from the Beach Walk Inn in Destin, Florida.

Roasted Sweet Potato Wedges Five Ways

A tasty side dish to serve with ham and two of the recipes are Weight Watcher’s and the third is from Taste of Home. A third recipe I just found 2-20-13 in a Taste of Home magazine sounds great that has a chili mayo sauce:

Weight Watcher’s Baked Pasta with Meatballs

This is a Weight Watcher’s casserole dish that is tasty and minus much of the usual fat and calories (I even cut back on the salt).  It is a little time-consuming to prepare but the results are worth it.  I have found that tomato-based Weight Watcher’s recipes need more sauce or tomatoes added, otherwise they are too … Continue reading

Quinoa Pilaf Three Ways

There are lots of good ways to cook this whole grain which is light, tasty and easy to digest.  Actually it is a seed of a leafy plant related to spinach.  Quinoa (keen-wah)  is quick and easy to prepare; contains more protein than any grain and includes all 8 amino acids. A white spiral forms around it when it … Continue reading

Weight Watcher’s Western Omelet

This is also known as a Denver omelet with the classic combination of onion, green peppers and ham in a fluffy egg mixture, a perfect breakfast for 2.   I changed the ingredients a little bit such as using low-fat cheese instead of ham and chipotle pepper instead of thyme.  See also Weight Watcher’s Broccoli … Continue reading

Corned Beef Hash Three Ways

I like to serve this for breakfast or as a light dinner with a salad.  Homemade is so much tastier than what you get in a can.  Before my husband met me that was how he fixed his corned beef – straight from a can!   This recipe comes from Weight Watcher’s and if my husband liked it, it … Continue reading

Japanese-Style Stir Fry

Stir-fries are usually very low in Weight Watcher’s points and this recipe use to have 0 points per serving.  I am sure it is now 1 or even 2 points per 3/4 cup serving but still that is very low for a nutritional side dish.  For another good vegetable stir-fry see Spicy Stir Fry Veggies.

Weight Watcher’s Corned Beef and Cabbage

This is a traditional dish I make every year for St. Patrick’s Day.   Having experimented with a number of recipes I finally settled with this recipe which everyone likes.  It is a Weight Watcher’s entree and another plus is that it is cooked in a slow cooker.

Hi-Fiber English Sourdough Muffins

If you like a sourdough taste to your bread give these  English Muffins a try.  This recipe comes from King Arthur Flour’s Baking Sheet with a points value of 3 per muffin and 4 grams of fiber.  Yes, this baking publication is now posting Weight Watcher’s Points Plus on all of their recipes.  All kinds of “good … Continue reading
