Cajun seasoning adds some nice heat to these Weight Watcher’s potatoes. If you like things on the mild side use less or even a different seasoning. Only 2 points per serving and this recipe serves 6.
- 1-1/2 lbs. new potatoes, cut into wedges
- 1 red or white onion, cut into wedges
- 1 tbsp. olive oil (I use less)
- 1-1/2 tsp. Cajun seasoning (more or less to your taste)
- 1 tbsp. fresh lemon juice
- salt and ground pepper to taste
Comment: Whenever I use a spicy seasoning (such as Cajun) I find I do not need to add salt or pepper. I always cut out the salt when I can! Also, even though this is a Weight Watcher’s recipe I usually can cut back on the recommended oil to use.
Preheat the oven to 425°F. Spray a baking pan with a nonstick spray.
Cook the potatoes in water for about 5 minutes; drain and transfer to a large bowl. Toss with the rest of the ingredients while still warm and arrange on the prepared pan in a single layer.
Bake until the potatoes are tender, about 30 minutes.
