Grilled Zucchini with Tomatoes and Basil

This combination of flavors always goes well together especially with a balsamic vinaigrette – my favorite vinegar!

Grilled Zucchini with Tomatoes and Basil

  • 2-3 zucchini
  • fresh tomatoes  (peeled and seeded) chopped
  • 2 tbsp. fresh basil, minced
  • 1 tbsp. balsamic vinegar
  • 2 tbsp. olive oil

Whisk the balsamic vinegar and oil together.  Add the chopped tomatoes and fresh basil.  Set aside to marinate for up to an hour.

Cut up the zucchini into strips; toss with a little olive oil and season with freshly ground salt and pepper.  Grill for about 15 minutes; cool and cut into 1-inch pieces.  Add to the tomato mixture.
