Lavender Balsamic Strawberries with Mascarpone Cheese

I am fortunate to have a store near me that sells all kinds of vinegars/oils/cookbooks/gifts, classes and lots of recipes using their products. As mentioned in another post I am very fond of the flavored balsamic vinegars. Fustini’s sells so many varieties and you can buy them in 60 ml, 200 ml and 375 ml bottles. The small size is very convenient when you just want to “taste” something.

There is a subtle flavor of the lavender – a favorite!

I’ve been saving this recipe just waiting for fresh strawberries and since I have all of the ingredients I wanted to share this summer treat now.

Lavender Balsamic Strawberries with Mascarpone Cheese

Adapted from Fustini’s:

  • strawberries, hulled and halved or quartered if larger
  • 1/3 cup Fustini’s Lavender Balsamic Vinegar
  • 1/2 tsp. fresh lemon juice
  • 1/2 cup mascarpone cheese, chilled
  • 2 tbsp. confectioner’s sugar
  • 1/2 cup heavy whipping cream, chilled
  • 1/2 tsp. vanilla extract
  • lemon zest

In a bowl combine the strawberries, vinegar, lemon juice. Add a little confectioners’ sugar (to taste) if your berries are not sweet.. Set aside and let macerate for at least 30 minutes.

Combine the mascarpone, cream, vanilla and 2 tbsp. confectioners’ sugar. Whisk until thick and soft peaks form.

Divide the berries and  top with mascarpone cheese mixture. You can add some lemon zest on top, optional.

  1. The perfect summer summer dessert!
    Balsamic Vinegar adds such amazing flavor to fresh strawberries, but using lavender fused one must take it into a completely different level. And the addition of lemon juice and zest makes it even better. 🙂

    • Not at all Mimi – it all depends on the brand you buy. Fustini’s vinegar is perfect in my opinion. If I recall correctly you’re not much of a “floral lover” but I think you would like this. Lavender can be strong but in this case it blends well with the vinegar 🙂

  2. this looks delicious. i often wish i could buy small bottles and jars of exotic foods as many recipes will only call for a small amount and then you have a bottle languishing in the pantry for aeons 🙂
