I love corn on the cob and look forward to it every summer. Typically, I just grill it wrapped in foil with a little butter but occasionally I like to step it up a bit. I looked at a number of recipes and came up with my own version of Mexican Street Corn On The Cob.
I know most people use charcoal or gas like we did for many years. Around 8 years ago I switched to a Weber electric grill and I have been so happy I did. No mess like with charcoal or running out of gas – only a power outage could keep me from grilling 🙂 With the 90+ muggy weather we’re having right now my meals are cooked outside on my electric grill. The smaller one quit working so I just use the bigger one now.
Mexican Street Corn
- corn, husks removed
- softened butter seasoned with kosher salt and freshly ground black pepper
- mayonnaise to lightly coat each ear of corn (you could also combine 3 tbsp. mayo plus 1-2 tbsp. sour cream and 1 tbsp. fresh lime juice for more flavor)
- Parmesan cheese, grated
- chili powder to taste
- cotija cheese to garnish
- chives and parsley (or cilantro) to garnish
- lime, cut into wedges
Brush each ear of corn with softened butter seasoned with kosher salt and freshly ground black pepper. Wrap in heavy duty foil and cook for about 15 minutes on your electric grill, turning once after 7 minutes. If I have a lot of corn to cook I use my slow cooker.
Working quickly, brush each piece with a thin layer of mayonnaise, then roll the corn in the Parmesan cheese. Put the corn on a platter, sprinkle with chili powder, garnish with cotija, chives and parsley (or cilantro) and serve with lime wedges.

Corn is a popular summer item here in Michigan where we grow it. I remember serving a corn dish to some Dutch and they mentioned corn was only used to feed the livestock (at the time anyways).
mmm. . . the Mexican Street Corn looks wonderful. I haven’t had any corn on the cob yet this season. This post makes me want to head to the farmers’ market to get some.
