When you think of fried rice most people assume there are fried eggs in it. Fried rice means using rice that has been precooked and often the recipe will have eggs in it. Not so with this post or any fried rice recipe I make as I am not into fried eggs! I recently read that Guy Fieri does not like them either! Always interesting to learn about the likes/dislikes of well-known American chefs. Of course you could add some if you want.
That being said this fried rice has so many yummy ingredients; shrimp, sausage and vegetables with Cajun seasoned rice. Delicious and what a nice treat from my normal Weight Watcher’s Fried Rice with just veggies. Besides you make the rice ahead of time (a few days even), the shrimps and sausage are fully cooked – all of this cuts back on the total cooking time. Very quick and easy – you just have to prep the ingredients and that can be done early in the day.

Cajun Shrimps and Andouille Sausages Fried Rice
Recipe adapted slightly from Food Network
- 3 tbsp. extra-virgin olive oil (I used only 2 tbsp.)
- andouille sausages, 10 oz. sliced or the same size as the veggies and shrimp (I used Johnsonville Cajun Andouille Sausage fully cooked) – I also have used Beyond Beef Hot Italian Sausages and loved them
- 2 stalks celery, small dice
- 1 medium onion, small dice
- red bell pepper, small dice
- 3 cloves garlic, minced
- 1-1/4 tsp. Cajun seasoning (I used 2 tsp.) – I have substituted 1 tsp. of Old Bay seasoning plus a generous dash of garlic powder and cayenne
- 3-4 cups cooked rice (I made Gandy Dancer’s Rice Pilaf)
- (I added 14.5 oz. can of petite diced tomatoes)
- (I added 1 tbsp. soy sauce)
- 8 oz. peeled and cooked shrimps (cut into pieces the same size as veggies and sausages)
- scallions, thinly sliced
- parsley to garnish (optional)
- lemon wedges for serving (optional)
Heat the oil in a large skillet and cook the sausages until browned, for about 3 minutes. Remove, drain most of the oil left and set aside. Add the celery, onion and red pepper to the skillet and cook for about 3-5 minutes. Add the garlic and Cajun seasoning and cook for an additional 30 seconds.
Add the precooked rice and tomatoes and stir until the mixture is heated through. Add the shrimp and sausage and cook until warmed through about 2 minutes. Adjust seasonings to taste and stir in the scallions.

It’s all about the other ingredients – shrimp, sausage and the Cajun twist – eggs can be an option 🙂
Judi, having been raised in rice, shrimp and Andouille sausages, this one goes right to my taste buds. Actually, my granny used to make a fried rice dish (and others) similar to your dish often. No eggs in her fried rice either. So, you’ve made my tummy homgry sick for some Cajun fried rice… We’ll be making this soon, though we’ll need to substitute Spanish chorizo sausage for the Andouille. Ron, it’s fun to hear your “American” background in addition to the life you now lead in Sweden. I didn’t grow up with this kind of food but I sure love it now. I have shrimp and sausage waiting in the freezer to make again as I loved this recipe. Chorizo is another favorite – spicy is always good.
Oh boy does this sound wonderful. I love shrimp and sausage together in any case, but all mixed into a fried rice sounds exceptional!
