Slow Cooker Lemon Chicken by Weight Watcher’s

I love to use my slow cookers all year round as they are convenient, easy to use and dishes such as this lemon chicken come out so tender and moist. Besides this is a Weight Watcher’s recipe worth 4 points per serving. I did add some potatoes and onions which would give this recipe 2 extra points. Your entire dinner in one pot!

Slow Cooker Lemon Chicken by Weight Watcher's

  • 3 garlic cloves, minced
  • 1 tbsp. olive oil
  • 1-1/2 tsp. oregano (could use thyme and sage instead, or even rosemary would be flavorful)
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 3 lbs. chicken breasts, bone in and skin removed
  • 1/4 cup reduced sodium chicken broth
  • 3 tbsp. fresh lemon juice
  • 1 tsp. lemon zest, grated
  • onions and potatoes, cut up (optional)

Combine the first five ingredients in a small bowl and rub this mixture on the meat. Weight Watcher’s wanted you to leave the skin on and remove it later but I preferred to do it before placing in the slow cooker.

Spray a skillet with non-stick spray and cook the chicken turning frequently, about 8 minutes. Transfer to a 6-quart slow cooker. Add the broth to the skillet and bring to a boil. Add 1 tbsp. lemon juice and pour over the chicken in the slow cooker. I always like to start off 1 hour on high, then reduce the temperature to low for about 2 hours. Add the potatoes and onions now if you are using.

About 20 minutes before cooking time is up, combine the remaining 2 tbsp. lemon juice and lemon zest and add to the slow cooker.

Cooking time will vary depending on the type of slow cooker you have, the size of the chicken and how full your cooker is.

  1. I love slow cookers too Judi. Lemon, oregano, garlic and other flavors are great with chicken. I like that it’s Weight Watchers too. A win win eh?

  3. This sounds really good. I sometimes struggle cooking chicken breasts but this recipe sounds just so right, timing and flavor wise. And I thought it’s excessive that I own 3 slow cookers, one mini, until I read your comment that you own 6! Lol! 😄😄

    • It’s just a matter of timing and knowing how long to cook everything based on the size and amount 🙂 I don’t really have set recipes as it seems to vary every time I make things…

  4. I need to buy a new crockpot, I sold my old one when we moved. Lots of good flavors going on…I know your chicken was yummy.

    • We use to entertain quite a bit and large crowds. One is for dips, one is for bread and then various sizes depending on the quantity I’m making. They are good to keep things warm such as soups – I can plug them in outside and the list goes on… Thanks for asking Mila 🙂
