I love to use my slow cookers all year round as they are convenient, easy to use and dishes such as this lemon chicken come out so tender and moist. Besides this is a Weight Watcher’s recipe worth 4 points per serving. I did add some potatoes and onions which would give this recipe 2 extra points. Your entire dinner in one pot!

Slow Cooker Lemon Chicken by Weight Watcher's
- 3 garlic cloves, minced
- 1 tbsp. olive oil
- 1-1/2 tsp. oregano (could use thyme and sage instead, or even rosemary would be flavorful)
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 3 lbs. chicken breasts, bone in and skin removed
- 1/4 cup reduced sodium chicken broth
- 3 tbsp. fresh lemon juice
- 1 tsp. lemon zest, grated
- onions and potatoes, cut up (optional)
Combine the first five ingredients in a small bowl and rub this mixture on the meat. Weight Watcher’s wanted you to leave the skin on and remove it later but I preferred to do it before placing in the slow cooker.
Spray a skillet with non-stick spray and cook the chicken turning frequently, about 8 minutes. Transfer to a 6-quart slow cooker. Add the broth to the skillet and bring to a boil. Add 1 tbsp. lemon juice and pour over the chicken in the slow cooker. I always like to start off 1 hour on high, then reduce the temperature to low for about 2 hours. Add the potatoes and onions now if you are using.
About 20 minutes before cooking time is up, combine the remaining 2 tbsp. lemon juice and lemon zest and add to the slow cooker.
Cooking time will vary depending on the type of slow cooker you have, the size of the chicken and how full your cooker is.

I’m sharing this delicious chicken meal with Angie at Fiesta Friday and her two co-hosts this week, Mila @ Milk and Bun and Hilda @ Along the Grapevine.

I just love my crockpot! I use it all the time. And lemon adds so much flavor to chicken, very nice!
I have about 6 different sizes – I use them all the time all year long!
I’m looking for a slow cooker this weekend. Sounds delicious
Thanks Suzanne – I love my slow cookers, especially for entertaining and in the warm months when you do not want your oven on.
Chicken and lemon go so well together. Looks very tasty! 🙂
You are so right Ronit – love lemon with some herbs – always good 🙂
I love chicken and lemon together too! What a delicious dish without the fuss!
Thanks Julie – there are some ingredients that always go good together.
I need to use my crock pot more often. This looks delicious and what a bonus that it is good for a diet 🙂
Thanks Antonia – my slow cookers are a favorite small kitchen appliance. I have 6 in different sizes for dips, soups, bread and the list goes on 🙂
Nice!
I love these flavors! yumm
Thanks – I do too!
🙂
Perfect recipe! I love it!
Lemon, chicken and herbs are always a good meal!
I love slow cookers too Judi. Lemon, oregano, garlic and other flavors are great with chicken. I like that it’s Weight Watchers too. A win win eh?
Yes Loretta – Weight Watcher’s has a lot of great recipes and this is one of them. Simple, but delicious!
Love Crock-Pot meals! I also love flavorful healthy ones too. Looks like a winner!
Thanks Sarah – love using my slow cooker for meals and entertaining 🙂
I always like slow cooker recipes really love the chicken with lemon flavor. Sounds delicious.
Thanks – chicken and lemon pair well together for sure 🙂
I love italian herbs on the chicken. They give that lovely umami taste which lingers on and on and on…yummy recipe Judi
Hugs and regards
Ana
Thanks Ana – Italian herbs are always a favorite and really go well with the chicken. Have a great week 🙂
think this could go longer? as in all day? or will this make the chicken totally dry?
The chicken should be about 160-165°F. Cooking this chicken any longer would surely make it too dry 🙂
I have never used a slow-cooker. When I saw my son had one in his kitchen, it made me think. I can imagine the flavors have fused and made one delicious meal. 🙂
I have used them so much when I entertained quite a bit and also during the hot months when turning the oven on is a no-no 🙂
Love the flavors in there Aunt Juju… 🙂 🙂
Thanks Chitra 🙂 Lemon, chicken and herbs always seems to go together 🙂
This sounds really good. I sometimes struggle cooking chicken breasts but this recipe sounds just so right, timing and flavor wise. And I thought it’s excessive that I own 3 slow cookers, one mini, until I read your comment that you own 6! Lol! 😄😄
Thanks Angie – love to use my slow cookers (all six of them LOL). They are a big convenience for so many recipes such as this chicken dish 🙂
I use my 2 crockpots a lot, often prepare chicken, but never combined the two. I think it’s time I gave it a try.
It’s just a matter of timing and knowing how long to cook everything based on the size and amount 🙂 I don’t really have set recipes as it seems to vary every time I make things…
I need to buy a new crockpot, I sold my old one when we moved. Lots of good flavors going on…I know your chicken was yummy.
Thanks Karen – I use mine (all 6 of them) at various times – great for entertaining and feeding a crowd.
Why do you need so many slow-cookers?))) The chicken looks so good and moist!
We use to entertain quite a bit and large crowds. One is for dips, one is for bread and then various sizes depending on the quantity I’m making. They are good to keep things warm such as soups – I can plug them in outside and the list goes on… Thanks for asking Mila 🙂
Wow! In that case I regret that I’m living so far from you and I’m not able to have a look at all your equipment and taste all dishes ))
So do I Mila 🙂 Have a nice day!
I love my slow cooker all year round too!
This chicken looks awesome, even better that it’s diet friendly! Yummy!
Thanks Michelle – I love all my slow cookers 🙂
I’m trying this recipe this weekend. I use my crockpot at least once or twice a week.😊
I hope you enjoy it – slow cookers are so convenient 🙂
