This is a favorite wrap, in addition to my Chicken Fajitas Wraps, as you can add any condiments you want. My family has so many different tastes/likes and dislikes that this always works well with everyone.
This post has my original recipe but you can use any marinade for flank steak. Recently I used my Dr. Pepper recipe, just be sure not to marinate it too long because of the sugar. You do not want a “sweet fajita”.
You can also make this on top of your stove. Slice the meat and cook in a skillet until almost done; set aside. Add the peppers and onions and cook about 10 minutes. Return the meat to the skillet and heat through.
Assemble your fajitas with lots of condiments on the side.
Beef Fajitas on the Grill
- 2 lb. flank, skirt or bottom round in that order of preference
- onions and green peppers, sliced
- 1/4 cup oil
- 1/4 cup white vinegar
- 1/4 cup soy sauce
- 1/4 cup water
- 3 tbsp. fresh lemon juice
- 2 tbsp. lime juice
- 1/2 tsp. black pepper
- 1/4 tsp. garlic powder
- condiments of your choice such as jalapenos, salsa, grated cheese, Avocado Sour Cream, onions and peppers
Combine above ingredients, reserve 1/4 cup or so, and marinate a 2 lb. flank steak with half the marinade and the onions and peppers with the other half. Refrigerate for about 6 hours or longer if desired.
Soak 2 cups of mesquite chips in water for 1 hour; drain. Place in your smoker (we use to have one built into the grill) or sprinkle over medium-hot coals. Drain steak, reserving marinade. Place onion and pepper slices in a foil pan. Of course you can cook this on any type of grill and do not have to smoke it.
Grill steak and veggies for 10 minutes; turn and brush the meat with reserved marinade. Continue cooking to your taste and baste with more marinade. For medium the temperature should read 145°F.
Slice meat diagonally across grain into thin strips.
Warm your tortillas or at least have them at room temperature. Fill each fajita with the meat and the condiments of your choice.
