I wanted to make a special drink/dessert for Thanksgiving and instead of a smoothie I came up with this yummy recipe. Very simple to make ahead of time and I know some adult family members who are going to enjoy it! This recipe comes from Taste of Home.
Pumpkin Pie Shots
- 1 envelope unflavored gelatin
- 1 cup cold water
- 1/3 cup canned pumpkin
- 1/4 cup sugar
- 1/2 tsp. pumpkin pie spice
- 1/3 cup butterscotch schnapps liqueur
- 1/4 cup vodka
- 1-1/2 tsp. whipping cream
- whipped cream and a sprinkle of cinnamon for garnish
In a small saucepan sprinkle gelatin over cold water; let stand for 1 minute. Heat and stir over low heat until the gelatin is dissolved. Stir in pumpkin, sugar and pumpkin pie spice; cook and stir until sugar is dissolved. Remove from the heat and stir in vodka, liqueur and cream.
The recipe said to pour into 12 (2 oz.) shot glasses. Well, I used my 7 oz. glasses and made only 6. Refrigerate until set about an hour or two. Top with whipped cream and a sprinkle of cinnamon. See recipes for whipping cream here.
