Portuguese Sweet Bread for the Mini Zo

Supposedly a southern New England favorite this recipe comes from the files of King Arthur Flour.  I just love their recipes and all of the products related to baking which they sell.  I have a Mini Zo now  which makes one pound loaves – perfect for two people or a small family.  See my post Kitchen Gadgets – Bread Machines.  You can smell the lemon/vanilla when it is baking and oh the taste – yes just a hint of lemon – perfect!  And the bread is tinted a light yellow reminding me more of a cake than bread 🙂

Portuguese Sweet Bread for the Mini Zo

  • 2/3 cup evaporated milk
  • 2 tbsp. butter
  • 1 large egg
  • 1/4 tsp. lemon oil
  • 2 tsp. vanilla
  • 1/4 cup sugar
  • 3/4 tsp. salt
  • 1-1/2 tsp. SAF Gold instant yeast (available from King Arthur Flour – please see comment below – you cannot substitute)

Comment:  Quoting from King Arthur flour, “This yeast is a strain of instant yeast specifically developed for high-sugar and high-acid (sour) doughs.  It’s formulated to last longer, and to hold up better, than regular instant yeast in high-sugar or high-acid situations”.

Place all ingredients into the pan in the order they are given.  Program the machine for Basic White Bread (firm or regular) and press start.


So easy and you will have hot bread in 3-1/2 hours!  I have said I like to try and bake/cook everything once and if I find it is not for me like baking a loaf of bread, a bread making machine is the answer.  This gadget does all of the work…
