Mini Zucchinis on Your Grill Pan or Grill Two Ways

I just love baby vegetables – I use to grow these in my big garden and was constantly checking for these little guys.  If you have ever grown zucchini you know they seem to grow right before your eyes.  Besides using them in baking and other dishes the kids had fun finding the “big ones”.  Recently Trader Joes was selling packages of these at a reasonable price too; any baby vegetable is always a little pricey!

One is very basic and the second recipe is Weight Watcher’s with a little mint.

Mini Zucchinis on Your Grill Pan or Grill Two Ways

  • 3-inch baby zucchini
  • oil for brushing
  • herbs/spices  of your choice (I used Italian)

Slice each zucchini in half lengthwise and brush the cut side with oil; sprinkle with seasonings of your choice.  Grill cut side down for 3-5 minutes or until you get nice grill marks; turn and grill the other side.   This time I used my Le Creuset grill pan indoors.   These are very tasty, tender and a favorite!

Mini Zucchinis

Weight Watcher’s Summer Squash With Parmesan and Mint:

A great dish to serve when you can buy small squash, such as zucchini, yellow or patty pan squash.  If you are using your grill you do need a pan to set on the grill so the squash do not fall through the grates.

  • 12 oz. mini squash, cut in half or in quarters if the vegetables are thick
  • olive oil to coat the vegetables
  • salt and pepper to taste
  • 1-1/2 tbsp. lemon juice
  • 1/3 cup Parmesan cheese, grated
  • small mint leaves
  • lemon wedges for garnish

Heat your grill or grill pan until very hot.  Toss the squash with oil and pepper.  Place cut side down and grill for about 10 minutes or until nicely charred.  Sprinkle with salt and drizzle with lemon juice.  Add the Parmesan and mint; serve with lemon wedges.
