Maude's Chicken Salad
Marinade for 6 breasts:
- 1-1/2 cups vegetable oil
- 6 tbsp. Dijon mustard
- 1 tsp. tarragon
- 1 garlic clove, minced
- salt and pepper to taste
- 6 tbsp. white wine such as Pinot Grigio or a Chablis
Dressing:
- 3/4 cup olive oil
- 1-1/2 cups vegetable oil
- 3/4 cup tarragon vinegar
- 1/2 cup Dijon mustard
- 1/2 cup honey
- salt and pepper to taste
Salad:
- lettuces of your choice
- radishes, thinly sliced
- green pepper, julienned
- cucumber, sliced and quartered
- fresh fruit and toasted pecans for garnish
Combine marinade ingredient and chicken breasts and marinate for several hours or overnight.
I like to grill the chicken breasts in my Le Creuset grill pan until done, depending on the thickness of the breasts; cool and cut into strips.
Combine the lettuce and vegetables and place the chicken breasts on top. Sprinkle with toasted pecans and add desired amount of dressing. Garnish with fresh fruit. Delicious…

Just loved Maude’s. Our theatre group went there after performances. This salad was the best! As I recall, the restau was reviewed as having an “intimidating dining room”. Boo to this review. Next thing we know, there’s a major renovation and jacked up prices. Oh but, there was a wine steward. Eventually closed then became a dance studio. So disappointIng! Now our group goes to Paesanos. Love it…please leave this great place alone!
I’m not sure I understand the end of your comment. I never post a recipe from my hometown unless I liked the restaurant. Maude’s salad I loved… Paesanos is a good Italian country restaurant and I have the chef’s cookbook “Perbacco Isabella”. I have yet to post anything but I am sure I will especially since you brought it to my attention.
I am an A2 ex patriot. I loved everything about Maude’s! I knew the owners, Leo and Carrie Angelos, and our crowd spent many days and evenings there.
Do you have any other recipes? I have been dying to find some of them.
