Cold Veggie Pizza Bites Two Ways

This is a great appetizer to make where you can get your guests involved by adding the vegetables of their choice – just have all of the vegetables prepared ahead of time.  This dough can be made from scratch or take the easier way by using crescent rolls you find in the refrigerated section of your grocery store.

Cold Veggie Pizza Bites Two Ways

Dough from scratch:

  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2/3 cup milk
  • 1/4 cup plus 1 tbsp. vegetable oil, divided

Combine flour, baking powder and salt.  Add milk and 1/4 cup oil; mix well.  Shape into a ball and knead 10 times.  Flatten into a disc and press onto the bottom and up the sides a little of an ungreased 15 x 10 x 1-inch sheet pan.  Prick with a fork all over; brush with remaining oil.  Bake at 425°F for 12-14 minutes or until edges are lightly browned.  Follow directions below for assembling.

  • 2 (8 oz.) containers of refrigerated crescent rolls (or make your own dough above)
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 (15 oz.) carton sour cream
  • 1 (1 oz.) pkg. dry ranch salad dressing mix
  • 1 (8 oz.) pkg. cheddar cheese, shredded
  • various vegetables such as broccoli or cauliflower, chopped; sliced red onions or green onions – diced;  shredded carrots; fresh tomatoes – diced; peppers – diced; jalapenos – minced

If you are using crescent rolls separate dough into 4 long rectangles and press into the bottom and up the sides of a 10 x 15 x 1-inch pan.  Press perforations to seal good.   Bake at 350°F for 10-15 minutes; cool.

Combine cream cheese, sour cream and salad dressing mix; spread a  thin layer evenly over the crust, enough for the vegetables to stay put.  I found this recipe makes more than I like to use.   I then like to cut the dough into pieces before adding the vegetables.  Lightly press the vegies into the cream cheese mixture and sprinkle with cheese.

You can prepare this ahead of time; just cover with saran wrap and chill until serving.

Another recipe I have  is a little  different.  Either make the fresh dough above or use crescent rolls.

  • 2 (8 oz.) pkg. cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 tsp. basil
  • 1/4 tsp. garlic powder
  • assorted vegies, chopped up
  • 2 tbsp. McCormick Salad Supreme Seasoning
  • (I would add some shredded cheese)

Mix the above ingredients and spread evenly in a thin layer over the cooled crust that has been cut into 3 x 3-inch squares.   Top with vegies and sprinkle with salad supreme seasoning.  I like to add some shredded cheese on top.
