I just loveeee fresh tomatoes and I eat them in some form almost every day during the growing season in Michigan. There are a lot of things you can do with tomatoes in a salad (see my recipe for Insalata Caprese which has no sugar and fresh mozarella cheese). Or Gene’s favorite was chopped up tomatoes and cucumbers with some Good Seasons Italian dressing. I usually peeled and seeded the cukes or throw in some sliced red onions.
Sweet and Sour Basil Tomatoes
- 1 lb. tomatoes
- 2-3 tsp. brown sugar
- 2-3 tsp. balsamic vinegar
- 1-1/2 to 2 tbsp. olive oil
- 2 to 3 tbsp. fresh basil, shredded (I used the leaves from my Spicy Globe Basil plant – see below)
- 1 tbsp. fresh chives, chopped
- you could also add fresh parsley, chopped and some green onions, chopped
Slice the tomatoes as thick or as thin as you like and arrange them on a serving platter. Sprinkle on the brown sugar. Drizzle the vinegar, then the olive oil over the top. Add the basil and chives. Make this dish right before serving.
Comment: Spicy Globe Basil is the perfect plant to grow when you have limited space in your garden. In the picture below it is only about 7 inches tall. It is an excellent container plant, stays small and still has that wonderful flavor of the bigger basil plants.
