I often serve these cookies as a light dessert after a Chinese dinner. Many years ago the teacher in one of my cooking classes made these. The almond flavored cookie is a perfect dessert after a stir-fry dinner. The cookies are very light with lots of almond flavoring.
Almond Cookies
- 3/4 cup sugar
- 1 cup butter, softened
- 1 egg
- 1 tbsp. almond extract
- couple drops of yellow food coloring
- 2-1/3 cups flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 36 blanched almonds (I used sliced almonds as that was all I had)
Mix sugar, butter, egg, almond extract and food coloring together. Combine flour, baking soda and baking powder and add to wet ingredients.
Using a 1-inch stainless steel scoop form into 1-inch balls and place 2 inches apart on a cookie sheet. I then roll them in my hands to smooth them out. Gently press an almond in the center of each ball. Bake 15 minutes in a preheated 350°F oven.
