This is an entree that every age seems to enjoy. A very easy dish to prepare the night before, let marinate and pop in the oven the next evening.
Balsamic Chicken
- 2 lbs. of chicken breasts, boneless
- 1 cup vegetable oil
- 1/2 cup balsamic vinegar
- 3 tbsp. sugar
- 3 tbsp. ketchup
- 1 tbsp. Worcestershire sauce
- 2 scallions, chopped
- 1 clove garlic, minced
- couple shakes of hot pepper sauce
- salt and pepper to taste
Combine all ingredients and marinate for at least 6 hours or overnight. Bake, covered in a 350°F oven for about an hour, depending on the thickness of the chicken breasts. I always pound my chicken breasts to the same thickness, they will cook quicker and absorb more of the marinade. This is also good on the grill.
