Cheddar Pie Crust (for Apple Pie) Two Ways

Lots of people like cheese on top of their apple pie, especially my husband.  This is one way to add the cheese by making a cheddar cheese pie crust.  I recently found another recipe from The Best of America’s Test Kitchen 2015.

Cheddar Pie Crust for an Apple Pie

  • 2-1/2 cups flour
  • 1 tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 cup of a good medium-aged cheddar cheese such as Vermont Cheddar
  • 10 tbsp. very cold, unsalted butter, cut into 1/2-inch cubes
  • 2 tbsp. very cold shortening, cut into 1/2-inch cubes
  • 3 tbsp. sour cream
  • 2 tsp. cider vinegar
  • 1/4 cup very cold water (more or less)

In a large bowl, mix together the flour, sugar, salt and cheese.  Freeze for about 30 minutes.

Cut in the butter and shortening until the mixture resembles coarse meal.  Add the sour cream and cider vinegar.  Slowly add the cold water until moist clumps start to form.  Once the dough holds together it can be  refrigerated.  It is said that to err on the dry side will create a flakier crust.  Divide the dough in half and wrap in plastic wrap.  Refrigerate overnight.

America's Test Kitchen Cheddar Pie Crust

  • 2-1/2 cups flour
  • 1 tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 1/8 tsp. cayenne pepper
  • 8 oz. extra sharp cheddar cheese, shredded
  • 8 tbsp. unsalted butter, cut into 1/4-inch pieces and frozen for 15 minutes
  • 1/3 cup ice water, plus extra as needed

Combine the flour, sugar, salt, mustard and cayenne in a food processor.  Add the cheddar and butter over top and pulse until butter is size of large peas.

Pour 1/2 of ice water over flour mixture and pulse until incorporated.  Repeat with the remaining ice water .  Pinch together the dough with your fingers and if it feels dry add a little more water.

Divide dough in half and form into a disk.  Wrap tightly in plastic wrap and refrigerate for an hour.  Remove and let sit for about 10 minutes until you can work with it.
