When you want a little taste of Pecan Pie make these yummy, bite-size desserts. The first recipe comes from a sister’s mother-in-law. I do not have the author for the second recipe but it looks real good. See also my recipe for Pecan Pie.
Pecan Pie Tarts
Crust:
- 1 cup flour
- 1/2 cup butter, softened
- 3 oz. pkg. cream cheese, softened
Cream together the flour, butter and cream cheese until smooth. Refrigerate dough several hours or overnight.
Filling:
- 3/4 cup brown sugar, firmly packed
- 1 egg, beaten
- 1 tbsp. butter, softened
- 1 tsp. vanilla
- 2/3 cup pecans, chopped
- 1/8 tsp. cinnamon (optional – I added)
To make the filling, combine all of the ingredients and stir in the pecans.
Roll out chilled dough and cut into 3-inch rounds. Fit dough into mini greased tartlet tins. Spoon filling into crusts until each is 3/4 full. Bake in a 350°F oven for 25 minutes or until filling is set.
When cool, remove tarts from tins. Makes 24 tarts.
Comment: I used the precooked shortbread tarts you can buy in 2018 and they worked fine. Just cook them for the same amount of time.
Pecan Pie Tarts with a Karo/Pecan Filling
Crust:
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 (3 oz.) pkg. cream cheese, softened
- 1 egg
- 1-3/4 cups flour
In a bowl, combine butter, sugar and cream cheese; beat until fluffy. Add the egg just to combine. Slowly add the flour and beat at low speed. Cover and chill for 1 hour.
Roll dough into 1-inch balls and press into bottom and up two-thirds of each cup. This recipe makes 36.
Filling:
- 1/3 cup light corn syrup
- 1/3 cup dark corn syrup
- 1/2 cup sugar
- 2 tbsp. butter, melted
- 2 eggs, slightly beaten
- 1 tsp. vanilla
- 3/4 cup pecans, chopped
Combine above ingredients except for the pecans. Spoon mixture into each prepared crust and top with the pecans. Bake for 20 minutes in a preheated 350°F oven or until lightly browned.

I don’t remember these tarts as being so sweet but they do have a lot of sugar which you were trying to get away from. All recipes can be adjusted, I guess 🙂
I did notice the amount of sugar, but sometimes customers ask for the “real thing”. 🙂
