Roasting potatoes, or any vegetable, brings out its natural sweetness and is always a simple and welcome side dish. You can use any seasoning you like depending on your taste but I like them kicked up a notch!
Roasted Red, Yellow and Blue Potatoes
- small red, yellow and blue potatoes (you can use any potato you want – these just look nice together and they taste better than the bigger potatoes)
- olive oil to drizzle
- Mrs. Dash Extra Spicy Seasoning Blend (salt-free)
Wash and dry the potatoes leaving the skin on. Cut up the potatoes into 1-inch wedges and place in a bowl. Drizzle olive oil over the potatoes, add your seasoning and toss. Roast on a baking sheet in a preheated 400°F oven for about 30 minutes. I turn each potato so that a side is touching the foil and not the skin for better browning.
I also like to drizzle them with olive oil, garlic powder, Italian seasoning and grated Parmesan cheese.
