Creme Fraiche Chicken For Two

I looked for a recipe online using creme fraiche, as I had some about ready to expire, and came up with this simple, quick dinner that is meant for two. Perfect – chicken breasts, a little pasta, creamy sauce with one of my favorite year-round veggies – zucchini (author used mushrooms) a touch of fresh basil and freshly grated Parmigiano-Reggiano. Always a good combination for me.

Creme fraiche is similar to sour cream but it is less sour, thicker and has a higher fat content. It is also more expensive but if you want to add a special touch to a dish use creme fraiche.

Don’t cook more than 4 oz. pasta or you will need to make extra sauce…

I used a 7 oz. jar for this recipe… I could eat this by the spoonful!

Creme Fraiche Chicken For Two

  • boneless, skinless chicken breasts for two (8 oz.)
  • salt and pepper 
  • 1 tbsp. unsalted butter, melted
  • 2-garlic cloves, minced
  • 1/2 cup sweet white onions, chopped
  • 1/2-1 cup zucchini slices or mushrooms
  • 1/2 cup white wine (I used Pinot Grigio) or apple juice
  • 2 tbsp. fresh basil, minced
  • 3/4 cup cream fraiche + 2 tbsp. garnish
  • 3-6 tbsp. Parmigiano-Reggiano, grated to garnish
  • chives or basil, minced to garnish
  • 4 oz. pasta (I used cavatappi) cooked according to package directions

Cube chicken and sprinkle with salt and pepper. Melt butter in a skillet, add chicken and cook until chicken is no longer pink and lightly browned.

Stir in garlic and onions and continue to cook until onions are translucent; add the zucchini (mushrooms) and cook until zucchini is soft. Remove the mixture and add white wine to deglaze pan.

Cook until most of wine has evaporated, stir in chicken mixture, basil  and creme fraiche and heat on low.

Serve over fresh, cooked pasta, garnish with 2 tbsp. creme fraiche and freshly grated cheese. Sprinkle with minced chives or basil and serve.
