I recently posted a Fattoush salad recipe using oil-based vinaigrettes, pita chips or sourdough croutons, fresh vegetables and herbs.
I also decided to try Christopher Kimball’s recipe with chicken and a Tahini-Sumac dressing which was very different for obvious reasons; the addition of chicken and tahini in the dressing. He always seems to come up with tasty dishes that tweak my tastebuds. This dressing was creamy and nutty with the tahini and tart and citrusy with sumac. This recipe is one of fifteen salad recipes – can’t wait to try more. I liked this so much that I used it in a Panini sandwich!

Fattouosh with Chicken and Tahini-Sumac Dressing
Tahini-Sumac Dressing with Chicken and Red Onions
- 1/4 cup plus 2 tbsp. fresh lemon juice (prefer not so lemony don’t add the 2 tbsp.)
- 1/2 small red onion, thinly sliced
Combine the two ingredients in a large bowl and set aside.
- 1/4 cup EVOO
- 2 tbsp. sumac
- 1/4 cup plus 2 tbsp. tahini
- 1 tbsp. honey (sometimes I like to use a flavored honey)
- 1 tsp. kosher salt (I used 1/2 tsp.)
- 1/4 tsp. pepper
Add the ingredients to the lemon juice/red onion mixture.
- 3 cups shredded cooked chicken (I used roasted chicken breast)
Toss all of the ingredients together before serving (Kimball used English cucumber, romaine, mint and parsley also). I like to add radishes, tomatoes and pomegranate arials.
Make pita chips or sourdough croutons to garnish.
If you use this in a sandwich you could add ingredients such as sliced celery and chopped pecans for extra crunch and flavor.

ooh yes i love sumac and tahini and lemon – this sounds so tasty.
I prefer this version with the Tahini-Sumac dressing over the oil-based 🙂 Salads are made to taste!
