Pork, Veggies and Apple Cider Stew in the Slow Cooker

My first thought was how delicious a stew using pork and apple cider would be. I mean I have lamb and beef recipes so why not add pork to the list. Apples are an ingredient which makes this the perfect Fall recipe. Be sure to serve it over egg noodles or at the very least have some good bread for dipping into this extremely good gravy – there is lots too!

Pork, Veggies and Apple Cider Stew in the Slow Cooker

Recipe adapted from thekitchn

  • 1-1/2 lbs. pork tenderloin (can use boneless pork shoulder) cut into 1-1/2″ cubes
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 3 tbsp. vegetable oil, divided
  • 1 white onion, cut into wedges which falls apart as they are cooked
  • 1/3 cup flour
  • 1 cup apple cider
  • 2 cups low-sodium chicken broth
  • 1 tbsp. Dijon mustard
  • 1-2 tsp. dried thyme
  • 1-2 tsp. dried sage
  • 1 bay leaf
  • potatoes (I used russet), peeled and cut into 1-1/2″ pieces
  • carrots, peeled and cut into 1-1/2″ pieces
  • 2-3 large apples (I used Cortland but any variety would be good), peeled, cored and cut into 1-1/2″ pieces

Pat the pork dry with paper towels. Season with 1 tsp. kosher salt and 1/2 tsp. black pepper.

Heat 2 tbsp. oil in a large skillet. Working in batches (if needed) add the pork in a single layer and sear until browned on all sides. Transfer to a 6-quart slow cooker.

Add 1 tbsp. oil to the skillet along with the onion wedges. Cook until lightly browned. Stir in the flour and cook a few minutes more.

Pour in the apple cider and deglaze the skillet. Make sure you scrape up all of those browned bits. Whisk in the chicken broth, mustard and salt and pepper to taste; bring to a boil.

Add the thyme, sage, bay leaf, carrots, potatoes and apples to the pork in the slow cooker. Pour the onion/broth mixture over top. Cover and cook until the vegetables and pork are tender.

I always like to start off with 1 hour on high and then reduce the heat to low. It took 1 hour on high and 4 hours on low – total of 5 hours!

Serve with egg noodles or for sure have some good dipping bread to soak up the sauce…

Note: The original recipe called for 3 lbs. of pork but I prefer to add more veggies than meat.

  1. Great pot! I’ve never seen one like that. Great stew. Love everything about it, especially the apple part, which go so well with pork.

    • It’s displayed on a stand with three other pots. I should use it more often. This stew has the best gravy (I seem to be into gravies lately) especially with the addition of cider and apples. A keeper for sure…

  2. Pork and apple are like two peas in a pod to me and I really like the sounds of the sage addition in your recipe. We’ll have to be giving this one a try. I love your vintage Le Creuset cast iron duck casserole. What fun! When we lived in the US we would always hit the Le Creuset outlet store and pick-up good deals. It’s provided us with a collection of pots of many colors. But, I never saw a duck lid, or I’d bought one…

    • I totally agree Ron – a favorite combination. The duck casserole was one of my first pieces – I see it’s not longer available unless on Etsy. I have one shaped like a tomato (red) and one that is a yellow pepper – both have lids. I have plates, bowls, regular casserole dishes and even the small ones in different shapes. A fun collection… The recipe is delicious and hard to quit eating it – comfort food at its best!
