Pan Boxty – An Irish Pancake

Boxty is a traditional Irish food native to the Celtic countries. There are 3 varieties of Irish Boxty; Pan Boxty, Loaf Boxty and Boiled Boxty, named after the way they are cooked.

Loaf Boxty is shaped in a loaf that has been baked in the oven and then sliced and fried in a little butter (or oil) until crisp.

Boiled Boxty is shaped into dumplings that are boiled to retain its special shape. Then the dumplings are sliced

Pan Boxty is a flat, savory pancake. The ingredients usually include freshly grated and mashed potatoes, flour with a touch of salt and then cooked on a hot pan. My recipe also includes buttermilk, egg, butter and also some baking powder. There are different amounts, ingredients and versions of these delectable Boxties!

Pan Boxty - An Irish Pancake

  • 1 cup mashed russet potatoes
  • 4 tbsp. unsalted Irish butter
  • 1 cup shredded russet potatoes
  • 3/4 cup flour
  • 1 tsp. baking powder
  • kosher salt and freshly ground black pepper to taste
  • 1 egg (lightly mixed)
  • 1 cup  buttermilk or you can use milk (you want a thick pancake batter)
  • butter or oil for frying

Peel 1 large russet potato (1/2 pound), roughly chop it, place in a small sauce pan and cover the potatoes with water. Boil for about 8-10 minutes or until tender. Add the butter and mash the potatoes.

Peel and grate 1 large raw russet potato (1/2 pound)  into cheesecloth over a bowl (I used a beige napkin).Throw out the liquid and add the grated potatoes to the mashed potatoes. Add the flour, baking powder, egg and salt and pepper to taste. Slowly add the buttermilk until you get a thick pancake batter.

Heat a large skillet and add some butter. Once melted add the Pan Boxty (I used a 1/4 cup measure) and fry until golden brown a few minutes on each side. You will see the bottom edges start to brown and then turn them.

Garnish with slivers of scallions (green part) and serve with your favorite Irish meal, whether it is with eggs and bacon for breakfast or perhaps corned beef for dinner.

  2. You can loaf, boil or Pan fry a boxty and I’d eat them all. But, I do believe the Pan Boxty would be my first. We love potato pancakes around here so I’ll be making these soon, even if St Paddy’s day has passed. Thanks for the posting Judi.

  3. Interesting. I had a boxty in Dublin and it was more like a crepe with a ham filling. (I chose my filling.) I love this recipe. I guess there are some variations. And who doesn’t love potatoes!

    • Just like many recipes there are lots of versions of it. The two main ingredients; mashed and freshly grated potatoes make up a Boxty. Make the batter thinner and you can use it as a crepe like you had 🙂
